That’s why it’s important to find ways to eat your favorites, but still stay within your budget and health goals. One of my favorite kinds of food is Mexican. Who doesn’t like a good taco? When I found this recipe for black bean tacos with avocado lime sauce (avocados being another one of my favorites), I knew I had to try the recipe. And, the result was amazing.

Green Grub Highlighted Recipe: Black Bean Tacos with Avocado Lime Sauce
Serving Size: 12 tacos
Crispy Black Bean Tacos
- 3 cups black beans
- 3/4 cups Mexican cheese blend
- 12 corn tortillas
- 2 tablespoons vegetable oil, separated
Avocado Lime Sauce
- 2 avocados
- 1/2 bunch of cilantro
- 3 limes, juiced
- 1 jalapeno, seeded if desired
- 1/3 cup olive oil
- 1 teaspoon taco seasoning
- 1 pinch of salt
- 1 tablespoon sugar
- 2 tablespoons water
